GRILLED OCTOPUS

WyldSide Grilled Octopus

INGREDIENTS:

  • 1 octopus

 

Poaching Liquid:

  • 1/2 gal water

  • 3oz salt

  • 1/2 bottle of dry white wine

  • 2 bay leaves

  • 2oz garlic, crushed

  • 2oz ginger, crushed

  • 2 kaffir lime leaves

 

Asian Glaze:

  • 8oz hoisin

  • 1 tsp crushed red pepper

  • 3oz rice wine vinegar

  • 4oz ginger

  • 2oz sesame oil

Note: Try this recipe with 2 tbsp Jody's Asian Persuasion in the glaze.

INSTRUCTIONS:

  1. Build a medium fire in your WyldSide.

  2. In a large stock pot, combine poaching liquid ingredients and bring to a simmer.

  3. Place octopus in water and let poach for 45 minutes to an hour.

  4. Once octopus is tender, remove from poaching liquid and allow to cool.

  5. Combine ingredients for Asian glaze and mix well.

  6. Brush the octopus with glaze and grill until heated.
