SMOKED CRAB PIE

Smoked Crab Pie

INGREDIENTS:

  • 2 tbsp butter

  • 2 tbsp olive oil

  • 2 cups onion, chopped

  • 2 cups celery, diced

  • 1.5lbs. raw shrimp, chopped with tails removed

  • 1/4 cup tomato paste

  • 2 tbsp flour

  • 1 tbsp cognac

  • 2 cups seafood stock

  • 1.5 cups heavy cream

  • 3 cloves garlic, crushed

  • 1/2 tsp salt

  • 3.5 tsp Durty Gurl Bloody Mary Rub

  • 1 tsp hot sauce

  • 1/2 tsp Worcestershire sauce

  • 8oz crab meat, cooked

 

Mashed Potatoes:

  • 5-6 large potatoes, peeled and cubed

  • 6-8 cups water

  • 4 tbsp butter

  • 1/2 cup heavy cream

  • 1 tsp Durty Gurl Bloody Mary Rub

  • 2 cups white cheddar, shredded

INSTRUCTIONS:

  1. Preheat recteq® to 350°F.

  2. Place 2 tbsp of butter, olive oil, onions, and celery in a large saucepan and cook for 5 minutes until tender.

  3. Add garlic and cook for 1 minute.

  4. Add tomato paste and cook for 1-2 minutes.

  5. Add flour and stir constantly for 2 minutes.

  6. Slowly pour in seafood stock and cognac.

  7. Lower heat to 300°F and simmer for 30 minutes.

  8. Bring heat back up to 350°F and stir in 1.5 cups heavy cream.

  9. Bring heat down to 275°F and let mixture boil for 15 minutes.

  10. Add Worcestershire sauce, hot sauce, salt, shrimp, crab, and Durty Gurl rub and set aside.

  11. Bring 6-8 cups of water to a boil.

  12. Add potatoes and cook 10-15 minutes until tender.

  13. Drain water.

  14. Preheat recteq® to 350°F.

  15. Place seafood filling into a 3 quart baking dish and top with potatoes.

  16. Top potatoes with cheese and bake for 25-30 minutes.
